Taste intensities vary with temperature.
The New Scientist (19.5.2012, p 5) reports findings published in the journal Chemosensory Perception that showed that the temperature of food can affect taste intensity. While temperature did not affect sweet foods, a peak in sourness is observed in warm food and a peak in bitterness occurred in cold food.
Dentists warn of acidic content of smoothies and juices.
The Telegraph (20.5.2012) discussed the findings of an investigation into the acid content of popular juice drinks and smoothies, which was conducted by the Sunday Telegraph. It found that many such beverages, which health-conscious parents 'misguidedly' give to children as one of their five-a-day fruit portions, contain high levels of acid and sugar that can destroy young teeth. One drink, called This Water with lemons and limes, described itself as 'a juice drink blended with pure squeezed juices and pure spring water', was found to have a pH level of 2.7, making it more acidic than cider vinegar. The Advertising Standards Authority banned an advertising campaign for the drink for failing to inform consumers of its sugar content. Other drinks tested included Tropicana orange juice; Copella apple juice, Innocent smoothies; Capri Sun orange drink; and Robinsons Fruit Shoot apple and blackcurrant low-sugar drink. All were found to contain acid levels ranging between 3.3 and 3.8. Coca-Cola was the most acidic drink, with a pH level of 2.5 and 12.5 teaspoons of sugar in a 500-ml bottle. Dr Kathy Harley, Dean of the dental faculty at the Royal College of Surgeons, said that the only healthy drinks for teeth are milk and water, and that fruit drinks and smoothies should be treated as a treat and only given to children once a week.
