Challenge testingThe aim of challenge testing is to simulate what could happen to a product during production, processing, distribution or subsequent handling by the consumers, following inoculation with relevant micro-organism(s) and storage under the representative conditions.

We are able to carry out challenge testing in different food matrices using validated methods for inoculation and a selection of natural isolates, i.e. micro-organisms previously isolated from relevant food matrices, maintained within Leatherhead’s extensive culture collection. Our expertise in microbial recovery means that we are able to use the best applicable methodologies for microbial detection/enumeration, based on the latest ISO standards and internal method development expertise.

Our challenge testing service follows the guidelines for challenge test protocols of the National Advisory Committee on Microbiological Criteria For Foods (NACMCF, Washington, D.C. USA, 2009) adapted into our internal quality systems.
