Dr Kevin Tipton, Senior Lecturer in Exercise Metabolism, Birmingham University
Kevin is a Senior Lecturer in Exercise Metabolism in the School of Sport and Exercise Sciences at The University of Birmingham. He is Associate Editor for Applied Physiology, Nutrition and Metabolism and serves on the Editorial Board of the International Journal of Sports Nutrition and Exercise Metabolism and the International Journal of Sports Physiology and Performance. He recently served on the National Academy of Science's, Institute of Medicine, Committee for Military Nutrition Research. He was the Sports Nutrition adviser for the Athletic Department at Auburn University and recently served as a Visiting Scientist at the Australian Institute of Sport in the Department of Sports Nutrition, for the International Olympic Committee on the IOC Sports Nutrition Consensus Conference committee, the FIFA and IAAF Sports Nutrition Consensus Conference committees and the UK Sport Nutritional Supplements Advisory Board. He has published over 40 papers in peer-reviewed journals and book chapters. |

Louise Dye, Reader in Biological Psychology, Leeds University
Louise is Reader in Biological Psychology in the Institute of Psychological Sciences, University of Leeds and a senior member of the Human Appetite Research Unit, headed by Prof John Blundell. She has held MRC and Royal Society Postdoctoral Fellowships in the UK and Europe and recently held a Marie Curie Professorial Fellowship in Jena, Germany. Dr Dye is a Chartered Health Psychologist and member of the British Psychological Society. She began her career in Human Psychopharmacology and has over 20 years experience in the assessment of cognitive function following nutritional and pharmacological intervention. Her research interests include functional foods for cognitive performance and wellbeing as well as hormone-food interactions and appetite/weight control. |

Nicole Patterson, Principle Consumer Analyst, LFI
Nicole works in the Consumer and Sensory Services team at Leatherhead Food International. She has recently worked on the European and US collaborative research project ‘Omega-3 Fad or Future’, benchmarking projects and moderating the Discussion Groups for the Members Forums on health claims and GI, and satiety. Nicole project manages and moderates LFI’s qualitative ‘Hot Topics’, most recently investigating consumer drivers and current perceptions of ‘Chilled versus Frozen Food’. After graduating in Business Administration, Nicole has 12 years of research experience spanning IT, sport and leisure, consumer products and retail industries, and holds a MRS Certificate in both Management and Marketing. Nicole is a competitive triathlete and marathon runner, so nutrition and the function of food span both a work and lifestyle interest. |

Dr. Stefan Siebrecht, Business Development Manager, Capsugel
Stefan holds a PHD in organic chemistry. He worked for several years for the pharmaceutical company Merck Sharp & Dohme as a scientific representative in the cardiovascular sector. In 1996 he joined LONZA where he was responsible for market development, science and sales of nutrients for human and animal nutrition in Europe. Since January 2003 Dr. Siebrecht has been the President of the German "Society of nutritionial science" GFE in Neu-Ulm Germany, a foundation of food companies who are interested in research and development of new and safe ingredients and compounds for food products. In June 2004 Dr. Siebrecht joined the dutch company DSM as global Director for Marketing and Sales PeptoPro®, a new milk peptide ingredient. He has worked together with scientists and authors to create and publish several books about nutrition and health, supplements, skin care, anti aging and sports nutrition. Since September 2007, Stefan has been working as Business development manager of Health and Nutrition Products for Capsugel in Europe Middle East and Africa. |

Dr Susan Sheriffs, School of Sports Sciences, Loughborough University
Susan is a Senior Lecturer at Loughborough University where she teaches Physiology and Nutrition modules on both undergraduate and postgraduate programmes. She has research interests in sport and exercise physiology and nutrition and publishes particularly in the areas of body water balance, sweat losses and post-exercise rehydration. Susan is a member of The Physiological Society, The Nutrition Society, the British Association of Sport and Exercise Sciences and is a Fellow of the American College of Sports. |

Ray Rice, Secretary/Treasurer of ISSFAL
Ray trained as a Food Scientist, at the Southbank University in London, and was awarded a Ph.D degree for his studies at the University of Illinois, USA in 1971. He first began working with the long chain omega-3 polyunsaturates in 1965, and has been closely involved with them ever since. For the past 25 years he has focussed on the health impact of these key nutrients, and has been at the forefront of the research which is gradually revealing their true significance for human health. From being involved with the technical aspects of fish oils while Technical Manager at Seven Seas Ltd, to his current status as an independent consultant, he advises many Companies and Organisations throughout the world. He is currently the Secretary/Treasurer of ISSFAL, the International Society for the Study of Fatty Acids and Lipids. ISSFAL is a scientific society with more than 500 members worldwide (www.issfal.org.uk); ISSFAL members are the scientists and medical professionals who have carried out much of the omega-3 research. He recently led the team which successfully applied for a health claim for omega-3 polyunsaturates in the UK. He is an acknowledged authority on the health effects of the omega-3 polyunsaturates, and has lectured in the UK and overseas on the subject for more that 20 years. |

Kath Veal, Business Manager Regulatory Services, Leatherhead Food International
Kath is the Business Manager for the Regulatory Services section at LFI. Kath is a Food Science graduate with previous experience in the food industry and analytical services. A qualified Trading Standards Officer with 12 years regulatory experience in practical inspection, sampling and food law enforcement. Kath has worked with the Food Standards Agency and sat on the LACORS Standards Panel advising on consistency of interpretation of food legislation. Kath's team includes 18 regulatory professionals who advise on global food legislation. An experienced presenter Kath has been involved in many conferences both at Leatherhead and external events such as Vitafoods, often speaking about the European controls regarding claims. |
