With food crime being high on the risk list, there is a far greater impetus for foodservice companies to drill down into their supply chains. The foodservice sector is arguably more exposed than many due to the often fragmented nature of supply chains. This Footprint Forum will address the regulatory considerations and risk areas of food authenticity.
